Michael Poirier

Michael Poirier is a culinary instructor with the Orange County Department of Education's ACCESS program, where he has spent the past five years teaching students in alternative education. Passionate about empowering others through food, he focuses on building confidence in the kitchen — teaching essential cooking techniques, food preparation, and kitchen safety that give students practical skills far beyond the classroom.

In addition to teaching, Michael is the owner of a successful BBQ catering business he has operated for the past six years. An award-winning pitmaster, he has earned recognition for his barbecue and regularly participates in pop-up events throughout Orange County, sharing his passion for great food with the community.

When he's not teaching or catering, Michael enjoys spending time with his wife and family, playing soccer, discovering new restaurants, and relaxing at the beach. His dedication to education, family, and the culinary arts makes him a passionate teacher and lifelong advocate for the joy of cooking.

Marco Escobar

With more than 25 years of experience in the culinary, hospitality, and foodservice industry, Marco Escobar has built his career around a simple belief: great food begins with knowledge, discipline, teamwork, and genuine care for others.

Marco's journey spans high-volume restaurant operations, healthcare foodservice, and culinary leadership. He has led kitchen teams, developed and implemented foodservice programs, managed food safety and sanitation standards, controlled food and labor costs, supported large-scale production, and mentored culinary professionals. One of the most meaningful chapters of his career was serving in culinary leadership at Cedars-Sinai Medical Center, managing complex healthcare foodservice operations while maintaining high standards for food quality, safety, patient satisfaction, and regulatory compliance.

Marco's goal is a classroom that feels like a professional kitchen — one where students learn through hands-on experience, understand food safety and sanitation, practice teamwork and communication, and develop the confidence to learn from their mistakes. For Marco, culinary education is about much more than cooking: it prepares young people with life skills, employability, professionalism, responsibility, and creativity they can carry into any career they choose.

As Marco says: “After more than two decades in this industry, I now have the opportunity to share what I have learned with the next generation. My greatest success will not simply be what my students learn to cook, but who they become through the experience.”

The ACCESS Mobile Kitchen

A centerpiece of the program is our custom-designed 20-foot food trailer, paired with a Ford F-250 tow vehicle. This mobile kitchen allows students to:

  • Work with industry-grade equipment
  • Prepare and serve food in real-world environments
  • Operate a fully functioning, health-permitted business
  • Cater events and serve the public

Students gain experience not just cooking, but managing operations, handling transactions, and delivering high-quality customer experiences.
